Spanish Omelet by Halle

Ingredients

1 large onion 1 large red pepper 2 medium cooked potatoes 2 tablespoons sunflower oil 4 eggs salt and pepper 2 tablespoons butter Cuttting board-sharp knife-nonstick frying pan-wooden spoon-mixing bowl-whisk or fork-spatula

Instructions

1-Peel the onion and chop it finely.Slice the potatoes.Cut the pepper in half,remove the seeds,and dice it.

2-Heat the oil in a frying pan.Cook the onion and pepper gently until soft.Add the potato and cook for 2 minutes.

3-Beat the eggs in a bowl.Stir in the onions,peppers,and potatoes,and season.Melt the butter in the frying pan.

4-Pour the mixture into the pan.Cook over low heat for about 10 minutes,then cook the top under the broiler.
