Rollo Cupcakes by Gerri

Ingredients

1 pkg Devils food cake 1 pkg instant chocolate pudding mix 1 C sour cream 1 C vegetable oil 4 eggs slightly beaten 1/2 C warm water 1 tsp vanilla 24 frozen rollo candies 4 sticks unsalted butter 2 tsp vanilla extract 1/4 tsp seasalt 1/3 C caramel syrup 1 1/2 lb powdered sugar

Instructions

Preheat oven 350 degrees
Beat together the first 7 ingredients until smooth
Evenly divide into cupcake tins
Push a frozen rollo into the center of each and smooth over to cover
Bake for 18-22 minutes and cool completely

Frosting:
Cream butter then add vanilla, salt and caramel - mix well

Add sugar slowly and mix well each time - taste as you go and add more caramel if needed
