Pecan Logs by Ed

Ingredients

1 large glass bowl, and 11x13 glass baking pan 1 stick butter 2 ¾ c. brown sugar 2 beaten eggs 1 T. vanilla 2 c. chopped nuts (I like pecans) 1 ½ c. Bisquick Confectioner’s sugar for dusting

Instructions

Melt butter in bowl in microwave. Add to it sugar, eggs and vanilla. Stir well. Blend in nuts and bisquick and stir thoroughly.
Pour into a greased 11x13 glass pan and microwave for 10 min. on 60 % then ½ turn for 2 minutes. Center is not quite set but will firm on cooling. Cut in squares or logs and dust with confectioner’s sugar.
Or….bake at 350 for 20 minutes, turn, and do another 5 min. center will be soft, but edges are solid and come away from baking pan. Quit now
Notes: I’ve made this several different ways and haven’t hit the exacta yet. If overcooked, they will be hockey pucks, so check frequently. It doesn’t say “hi”, and all microwaves are different. Mine is too small to rotate a 11/13 pan, so I follow the original and just keep checking. I’d ck after 7 minutes and go from there.
