Peas Braised with Butter Lettuce by DuncanLM

Serves 6

Ingredients

1 head Butter lettuce, wash, dried and cut into chiffonade=ribbons 3 Tbs butter 6 Tbs water 1 Tbs sugar 1/4 tsp salt Pinch fresh ground pepper 2 cups frozen peas 2 tbs chopped parsley 6 green onion, sliced thickly (or leaks) Butter, slat and pepper as needed

Instructions

Bring butter, water, and seasonings to a boil in a saucepan.
Add peas and toss to cover them with liquid.
Stir in parsley, green onions, and lettuce.
Bring back to boil, reduce heat, and cover.
Cook for 6-10 min or until lettuce and peas are tender.
Remove from liquid,
Correct seasonings and gently toss peas with 1-2 Tbs additional butter if needed.
Keep warm or serve at once.
