[iain made this. pretty good; would def make again unlike some other corn bread recipes. i used fine maizemeal, not the chunkier polenta whichever you use, don't get confused with white cornflour. great with chili con carne. works as muffins or as a loaf. ] moosewood cookbook by mollie katzen delicious corn bread 20 minutes to bake. one 8 inch pan. 425F oven [AMERICAN UNITS!!! sorry:] 1 cup yellow corn meal 1 cup unbleached white flour 3 Tbs melted butter 1/4 cup honey 1 cup buttermilk 1 egg 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt


1. beat together egg, buttermilk and honey
2. mix well together all dry ingredients.
3. combine all ingredients, including melted butter, and mix well.
3. spread into buttered 8-inch square pan, and bake.

serve with butter and a chunk of cheddar cheese.
