Eggs poached in tomatoes and spices by CorinneC


1 onion, diced 2 garlic cloves, sliced 1 red chilli, desseded and chopped 1 teaspoon cumin seeds 1 teaspoon grated ginger 3 ripe tomatoes 2 eggs fresh coriander 1 spring onion, choped salt and pepper olive oil Serve with bread.


Heat up a frying pan over a medium heat, add olive oil, fry the onions for 10 minutes, then add the garlic and chilli and fry for 1-2 minutes.

Add the cumin and ginger, fry for a minute, add the tomatoes, season, cook for 15-20 minutes until tomatoes have collapsed 'add a bit of water if necessary).

Make wells in the mixture and break an egg in them. Cover the pan and cook over a medium-low heat for 5-6 minutes.

Sprinkle with spring onion and coriander. Serve with bread.
