Vegetable Brie Strata by BB

Ingredients

1 sliced onion 1 diced red bell pepper 1 diced green bell pepper 2 tablespoons oil 1/8 teaspoon salt 8 ounce Brie Cheese with rind removed 9 x 13 greased baking dish 5 cups cubed sourdough bread 8 eggs 3 cups milk 1 1/2 tablespoons dijon mustard 1 teaspoons Italian seasoning 1/2 teaspoon salt 1/2 teaspoon pepper

Instructions

Saute onion , red and green peppers in the oil until soft.
Add 1/8 tsp. salt.
Cut Brie into small cubes.
In the greased baking dish, layer the sourdough bread, vegetable mixture and Brie.
In a large bowl whisk eggs, milk, mustard, Italian seasoning, salt and pepper.
Pour over bread mixture.
Chill overnight.
Bake at 350 for 45 - 50 minutes.
Serves 6.
