Crockpot Mess of Fennel (Vegan) by AJ

Nice to serve over grain such as quinoa or couscous. Also, add tofu or chickpeas to make it a meal.

Ingredients

4 large fennel bulbs (or equivalent smaller ones) 2 tablespoons olive oil 1 large yellow onion, diced 4 teaspoons fennel seeds 2 teaspoons yellow curry powder 1 teaspoon dried thyme 2-3 cups chopped fennel stalks and leaves 6 cloves garlic, crushed 6 tablespoons tomato paste 2 tablespoons capers, drained 3 cups vegetable stock

Instructions

Add all ingredients to a crock pot. Cook oh high for 4 hours or low for 8 hours or until fennel is tender.
