This makes a lot, so if making for just a few people, half it. Also, it does not keep well overnight because the noodles get soggy, but it still tastes great.

Ingredients

Ramen: 1/2 stick margarine 2 packs ramen noodles, broken into bite-size bits (save seasoning pkt. for later) 1/4 - 1/2 cup sunflower seeds Dressing: 1/4 cup sugar 1/4 cup white vinegar 1/4 cup oil 2 Tbsp soy sauce Slaw: 1 package slaw mix (tri-color) 3 green onions (or more) chopped (green and white parts)

Instructions

Ramen:
Melt butter in a large saucepan over low heat. Add the broken ramen and seeds and saute on low until lightly browned and crunchy. Watch that it does not burn. Cool.

Dressing:
Combine ingredients in a small saucepan. Bring to a boil. Simmer over medium heat for 2 minutes, stirring to dissolve sugar. Cool and add soy sauce.

Slaw:
Put slaw mix and onions into a large bowl. Add ramen mixture, then pour dressing over all and stir well.

Serve immediately.
